Combine the peeled, cored, and sliced apples with the apple cider, sugar, lemon juice, and spices (salt, cinnamon, ginger, nutmeg, and star anise pod) in a large pot.

Cook the mixture over the stovetop until it becomes thick and brown.

Be sure to remove the star anise pod halfway through the cooking process.

Prepare your jars by boiling them for 15 minutes to sterilize.

Pour the hot apple butter into the hot jars.

If canning, process the filled jars for 10 minutes.
