Preparation
Step 1
Preheat oven to 350°F.
Step 2
In a medium bowl, combine, flour, oats, salt, and baking soda.
Step 3
In a large bowl, whisk butter, brown sugar + vanilla until well combined

Add dry ingredients and stir with a rubber spatula or wooden spoon until well combined.
Step 5
Place half of the cookie dough and place it in the refrigerator (it will be the topping).
Step 6
Press remaining dough into the prepared pan.
Step 7
Bake for 7 minutes.
Step 8
Remove from the oven and carefully spread the jam on top of the cookie base.
Step 9
Take the reserved cookie dough from the fridge and crumble it over the top of the jam layer.
Step 10
Return to the oven and bake for 10-12 more minutes, until the topping is light golden brown.
Step 11
Cool well before cutting.
